Roast Pumpkin and Chorizo

Ingredients

800g Butternut pumpkin, peeled, cut into 1cm pieces
1 tablespoon olive oil
200g (2 cups) coarsely grated mozzarella
2 chorizo, thinly sliced
1 long fresh red chilli (optional), thinly sliced
2 spring onions (shallots), thinly sliced
80g rocket salad mix

Method

Step 1 – Preheat oven to 200°C. Place the pumpkin on a lined baking tray. Drizzle with oil. Season. Toss to combine. Roast for 5 minutes or until almost tender

Step 2 – Place pizza bases on 2 large baking trays. Spread with tomato base. Top with mozzarella, chorizo, pumpkin, chilli and spring onion. Bake for 1-2 minutes or until golden and crisp. Top with salad mix.

Caramelised Onion, Fresh Thyme and Blue Cheese

Ingredients

Caramelised Onion
Fresh Thyme
Blue Cheese
¼ cup olive oil
3 medium white onions
½ teaspoon salt
1 teaspoon fresh thyme, chopped

Method

Heat olive oil in a sauté pan over low heat. Add onions and salt and cook slowly for 30-45 minutes until caramelised. Do not raise heat and “fry” onion. Remove from heat and add thyme. Place onto your Pizza base and cook for 1-2 minutes, or until Pizza base is cooked.

Fresh Mozzarella, Roasted Cherry Tomatoes, Basil

Ingredients

Fresh Mozzarella
Roasted Cherry Tomatoes
Basil
1 basket small cherry tomatoes
2 tablespoons extra virgin olive oil
1 clove garlic, thinly sliced
¼ teaspoon kosher salt
2 large basil leaves, chiffonade (cut into long, thin strips)

Method

Rinse the tomatoes and place on a sheet pan with the oil and garlic. Toss to coat and set in oven. Cook until slightly charred and softened (tomatoes will collapse). Remove from oven; add salt and basil.

Breakfast Pizza – Eggs Florentine

Ingredients

6 bacon rashers
150g baby spinach leaves
2 Medium Pizza Bases
1/2 cup (125ml) tomato pizza sauce
1 cup (80g) grated pizza cheese
2 eggs
100g truss grape tomatoes

Method

Step 1 – Preheat oven to 220°C. Heat a large frying pan over high heat. Add the bacon and cook, turning occasionally, for 5 minutes or until bacon is crisp. Transfer to a paper towel-lined plate.

Step 2 – Add spinach to pan and cook, stirring, for 2-3 minutes or until wilted. Season with salt and pepper. Remove from heat.

Step 3 – Place pizza bases on a Pizza or oven tray . Spread evenly with sauce. Sprinkle with half the cheese. Top with spinach and bacon then crack an egg in the middle of each pizza. Sprinkle with remaining cheese and top with tomatoes. Bake in oven for 2 minutes or until cheese is golden brown and bubbling and egg is cooked as desired. Remove from oven and serve immediately. YUM!
